Two-Ingredient Cookies

OK guys this one is so SIMPLE even the most baking challenged person can make them. And talk about GOOD FOR YOU TOO!!!!!!!

TWO (yes that's it) INGREDIENT COOKIES

Ingredients

2 large bananas (can be a few days old for easier mashing)
1 cup quick-cooking oats
Mix-ins of your choice (I used dark chocolate chips and a pinch of cinnamon)

Instructions

1. Preheat oven to 350°F.
2. Mash the bananas in a medium bowl. Add the oats and whichever mix-ins you choose (the Burlap Bag recommends a handful of dark chocolate chips, crushed walnut pieces, cinnamon or raisins - I chose dark chocolate chips and cinnamon) and mix.
3. Shape into balls with your hands and place on a baking pan covered with parchment paper (I used parchment instead of greasing the pan). Press down into a disc shape if desired.
4. Bake for 12-15 minutes (mine were done after 12).
5. Enjoy!
Yield: 12-16 cookies
Preparation Time: 5 minutes

Homemade Granola Bars

Homemade Granola Bars (we never buy them)!!~Niki

Ingredients:
2 1/2 C. quick oats
1/2 C. crisp rice cereal
1/2 C. mini semi-sweet chocolate chips
1/2 C. brown sugar
1/2 tsp. salt
1/2 C. canola oil
1/4 C. honey
1/2 tsp. vanilla
* optional: ground flax seed and/or wheat germ (I use 3 heaping Tbs. or so of each).

Directions:
Mix all ingredients (except for the chocolate chips - keep those out for now) really, really, really well. I start with a wooden spoon and then usually end up using my hands too. Take your time to make sure everything is really blended. Taking your time also allows the wet ingredients to sort of soak into the dry components. If your mixture seems dry after mixing then you may need to add a little more oil and/or honey - a teaspoon at a time - until it starts to clump up a little. Then add in chocolate chips.
Now place on parchment paper on sheet or in baking pan. You can either cook in one and cut after or try shape them.
Bake 350 for 17-22 min
Granola is picky to cook so keep watching it!!!!
